This is my favorite episode of My Grandmother's Ravioli. Love it!
Osho would say that the past is done and gone and that the future has yet to occur, so live in this moment now. Since my leg injury and retiring, it is very different not having a set work schedule and just trying to adjust to all of the changes. I really wanted to finish nursing school and have a family. Osho would say that you need to keep staying in the moment and try to enjoy life's other possibilities or whatever positive ways to say you can't do or be most of what you had worked for or planned to in your life and that maybe other good things could happen instead. I won't stop trying to help make my life better with my current circumstances and am very grateful for the good things, especially my husband, but it doesn't mean that hasn't been difficult sitting with these emotions and events. Osho would say let go and "leap" into newer possibilities. Joseph Campbell said "We must let go of the life we have planned, so as to accept the one that is waiting for us."
I am trying and being mindful of this, Osho and Mr. Campbell.
4/28/13 - I made orchiette pasta with mushroom cream sauce from Emeril's recipe a few months ago. The pasta has gluten, but that can easily be changed. I added some green peas for some extra color and texture. The sauce was so easy and delicious! I froze only one cup and gave the rest to friends and family. They loved it too! Can't wait to make this again!
Sunday I made fudge bar cookies for the girls. I used a gluten-free flour mix. Thank goodness I took a picture of it right when I put it in the oven, because they were devoured! The girls loved the cookie bars still warm from the oven. The cookie bars were fine but a bit dry at room temperature.
The fudge layer could have been thicker. The top layer could have been thinner. Next time I will reduce the amount of the batter reserved for the top to 1 cup instead of 1 & 1/3 cups. I will also increase the thickness of the fudge layer by increasing the chocolate amount from 8 ounces to 12 ounces. Overall, these bar cookies were delicious. I do intend to make them again.
Today I prepared two smoothie recipes to freeze. The first used kale, apple, banana, blackberries, strawberries, raspberries, blueberries, and banana. The second used kale, blackberries, strawberries, raspberries, blueberries, fresh ginger root, and dandelion greens. At first, I was not sure my little blender could handle the dandelion greens, but it did just fine after a few additional pulses.
Last week I downloaded my first e-book. It seems like all of my friends have tablets, so I had to get one too. It took me a long time to decide which one to get (as usual). I didn't want a uni-tasker (like a plain e-reader only kindle) or a tablet that limited my web viewing (like the ipad). I finally settled on a Toshiba Excite 10 with 64 gbs. I like it so far. I don't see any screen bleeding on the edges. I have successfully frozen the entire tablet twice without terrible consequences. I blame this on my computer science-y days. It was a good test though. I like the sd card slot to expand the memory. The screen is larger than the kindle fire. And, it was on sale. We'll see how I like it a year from now.
One of my doctors found an adhesion on my hamstring muscles right where they criss-cross above the knee. They, including one of my doctors, say there are noninvasive ways to help adhesions, but my nurse friend said surgery is better at dealing with the adhesions. I told my other doctor this. I guess they will let me know this week what he thinks.

Today I made My Extraordinary Life's copycat recipe for Lean Cuisine's Santa Fe style rice and beans. My mom and I both like this frozen dinner. Why not try to make it at home? Holy cow, is this recipe delicious!

I like the dish with and without the cheese. I didn't add the sour cream because I was happy with the dish already. I did add a bit of hot sauce and some granulated organic kelp. The hot sauce added a bit more heat. The kelp just adds trace minerals. Most of the ingredients were organic (all but two). The corn was also certified nonGMO. I used organic nonGMO long grain brown rice, so my cooking time was longer by a few minutes or so.
I gave some to my recipe-tester friends and froze the remaining portions. One tester loved it. The other testers have not gotten back to me yet.
I told my mom how good this came out and told her I would bring her some, but I think I will just make a batch for her at her house. That way she can freeze the rest for her lunch or whenever.

Yesterday I made gluten-free organic nonGMO brown rice mac and cheese with broccoli. I like the gooey cheese kind of mac and cheese, so I used a stove top only recipe. I added broccoli to bulk up the serving size without adding too many more calories or fat and to add cruciferous-ness to the dish. I used some lower-fat options as well. I had one serving for supper and froze the rest in individual containers.
Tonight I made little polenta pizzas.

Waking by Matthew Sanford - This is a memoir style narrative that details the author's tragic auto accident that took his father and his sister's lives and left him paparlyzed from the waist down. Mr. Sanford relates his experiences and the yoga practice he developed. I am anxious to get started. If he can survive his physical limitations and tragedies, then maybe there is hope.
Gluten-Free Recipes Conscious Cook by Leslie Cerier - One of my doctors is encouraging me to go gluten-free. even though I eat a lot of other grains than wheat, it has been challenging to remove all of the whear from my diet. This is a nice little book for gluten-free vegetarian cooking with simple recipes to increase the amount of non-wheat grai s into one's diet. Ms. Cerier promotes organic living, but makes no mention of GMOs, especially in the corn section. She also says that food grown underground, like potatoes, do not need to be organic. I disagree. Food grown closer to the ground, food that lays on the ground while growing, or food grown just below the ground should be organic because they are more likely to sit in or near where the pesticides etc fall. Why would one want peanuts or raspberries grown in a puddle of pesticides?

He is pretty good at making a crunchy outside, smooshy inside Italian style loaf. The Book of Kale by Sharon Hanna - Who doesn't love kale? Ok, so a lot of people don't love kale. Again, that same doctor wants me to eat more kale. Fortunately, I love kale. This book has tons of recipes (surprise! most are gluten-free), pictures, and instructions to grow your own kale!
